I’ve got good news and bad news. I’ll start with the bad.
Bad news: Our summer CSA is over.
Good news: We bought into the Fall Harvest with the same farm!
Summary: We have a ton of veggies right now, and until tonight we were certain some might end up in the trash. Which is even worse news than the news about our summer CSA.
But… when we went to pick up at the farm today (note: that means even. more. veggies.), Robin mentioned just dicing up everything, throwing it in a pot, then covering it with curry sauce and serving over rice.
The original plan for dinner tonight was pizza. And since neither me nor Lovey handle lactose well these days, goat cheese is our best option. But, the random Food Lion that we went to didn’t have any. What they did have, though, was curry sauce! On closeout! So… we bought 2.
‘But Lindsay, you hate Indian food and curry! You told us so here.’ I know. I hear you. Loud and clear. But I went for it anyway. And I was surprised. It was GOOD. And my tongue didn’t revolt.
I don’t have a recipe for you. This is sort’ve a cheater meal to make. We happened to have purple eggplant, green eggplant, red peppers, potatoes, sweet potatoes, and tomatoes. You might have green beans, peas, squash, and zucchini. Whatever- just chop them up. A lot of them.
Then, throw them in a large skillet with some oil and saute. Then about 10 minutes in, put about 1/2 c. of water to boil/steam and cover. Let all of that go until everything is the texture you like. You may need more water or oil. Then throw in come curry sauce you bought on sale on a whim. Simmer.
Meanwhile, cook some rice. Brown, white, flavored- whatever you’ve got on hand. Don’t have rice? Pasta would be fine. Mashed potatoes would do. Even a nice slice of toast would work 🙂
