Another week of gorgeous veggies, another week of yummy nutritious meals. This week, we got what I now know are patty pan squash (these are yellow, we got green and white last week), beans, potatoes, tomatoes, and eggs.

Because we didn’t know what to call this type of squash last week, we made up our own recipe. And it was DELICIOUS! So if you ever happen to have patty pan squash on hand- here are two ways to make them.

The Lindsay & Josh experimental method: Slice the squash. We used our new mandolin and it worked wonders. Lightly coat in olive oil and sprinkle on some salt, pepper, fennel fronds, and Mrs. Dash Onion & Herb. Or just use whatever is in your spice rack and sounds good. Then grill them. Really tasty!

Robin the Farmer’s method: Cut it in half and spray nonstick stuff on the cut side. Lay them cut side down on a baking sheet and bake until soft. Turn them over, put a little pat of butter and cheese on top and broil until cheese is melted. We are going to try her method this week.

In other news, my sweet friends Katie and Chris are getting married at the end of July! Katie is a dear, dear friend since third grade, and Chris is a good friend since college. Chris (of Chris Isham Photography) shot our wedding and did an amazing job. They had a couples shower Friday night and it was a blast. Here are a some shots of the evening-

Katie and Chris- Can’t wait to share in new memories, and watch how God works in your journey as one.

      hi tracy!
glad you found me 🙂 i’ve subscribed to your blog too (and commented in hopes of winning your giveaway!)
we had NO idea what to do with the patty pan squash we got from our CSA, and we didn’t know what they were called either. and because it’s very difficult to look up recipes for an ingredient you don’t know the name of, we made it up. so we sliced it thin with the mandolin, tossed it in EVOO and spices, and threw it on the grill. and it was good.
let me know how it works for you!!
